This chickpea stew is simple and delicious 🍲 and is thrown together mostly with ingredients you already have on hand. Except, you’ll need a package of cherry tomatoes. I used ginger paste instead of fresh, and dried mint instead of picked leaves. I wouldn’t recommend swapping garlic cloves for crushed garlic. 🫕 Dill pickle chip in soup form: Polish Pickle Soup is better than you can imagine. - I used homemade broth and I think that matters - You could cut some calories by swapping that wad of sour cream for coconut milk - Would make a good office lunch

if you have spaghetti squash, ground beef, any vegetables, pasta sauce and cheese… cut squash in half, remove seeds and roast face down in olive oil at 375F for 40 mins. In the meantime, brown an onion and ground beef, add in vegetables (I used kale but mushrooms and peppers would work), tomato sauce and any seasoning you like (basil, oregano) for 30 mins. 🍝 Making homemade noodles and sauce was a fun way to spend a Sunday afternoon. It took a lot more time and patience than I thought (much like launching a new social network ;) I had a pasta maker that I acquired during the pandemic but by hand is also an option.
