This chickpea stew is simple and delicious 🍲 and is thrown together mostly with ingredients you already have on hand. Except, you’ll need a package of cherry tomatoes.
I used ginger paste instead of fresh, and dried mint instead of picked leaves. I wouldn’t recommend swapping garlic cloves for crushed garlic.
Tip: you can freeze the leftover tomato paste in an icecube tray and use a puck of it whenever you need a tablespoon or two.
It takes more than an hour in the oven but towards the end your whole house smells great :)
