whole chicken

Rinse chicken and pat dry with paper towel. Take out giblets, stuff with two halves of lemon, any herbs you choose and whole garlic cloves.

Spice the outside with a dry rub. Can try paprika, rosemary, thyme, salt and pepper.

Grease the bottom of the pan, chop veggies, peel garlic and toss it in with the chicken. I added bay leaves and fresh parsley. Bake at 350 for 45-55 mins. Stir and baste at the at 45 mark.

When chicken is done, remove and carve.

Crisp veggies for extra 10 minutes at 400.

Optional gravy: when removing the chicken, also set aside juice, onion and lemon into cast iron pan. Shake some flour and cold water in a mason jar then mix flour mixture with your juice and onions until you’ve got a gravy you’re happy with.
