cut squash in half, remove seeds and roast face down in olive oil at 375F for 40 mins. In the meantime, brown an onion and ground beef, add in vegetables (I used kale but mushrooms and peppers would work), tomato sauce and any seasoning you like (basil, oregano) for 30 mins.
Once squash is soft, flip over and top with filling. Roast for another 40 mins + top with cheese (mozzarella is best) at the 30 minute mark.
another option: once it’s done, hollow out entire contents, mix spaghetti squash with filling and return to squash skin.
