These cookies were a hit at our office lunch. I used unsalted butter (but salted might be even better) and substituted half of the chocolate chips with dried cranberries. I also left out the pecans in case of allergies.

I'm a little late to the game, but I've only started my Christmas baking in earnest this weekend. Here is my favourite recipe for soft, delicious and pillowy ginger"snap" cookies. No snap however in these babies! This is a fairly easy to follow recipe that yields a good amount. Depending on the size of ball you roll you can get any where from 4 to 5 dozen cookies. I was able to get 56 today! Kid approved as my count is now down to 54 😀
