Trinidadian Oven BBQ chicken ! My husband is from the Islands of Trinidad and Tobago and he taught me how to make this.
The secret is in the green seasoning that you marinate the chicken in before baking.
So instead if the bbq recipe I am sharing the green seasoning recipe. Here's what you need : parsley, green onion, ginger, garlic and thyme.
Blend altogether with a tablespoon of lemon juice and a dash of vinegar. (These are optional). Our secret ingredient is something called chado beni. A Caribbean herb. No one supplies or grows it in Sault Ste Marie so most Caribbean people get our supply from neighboring cities.
Clean and Marinate chicken(overnight). Bake for 35 mins at 350° , base with your fav. Bbq sauce( I make my own) and bake for another 40 mins at 400°.
