Recipe is for an 8x8 pan Cheesecake filling:Two 8-oz packages cream cheese, room temperature (16oz total)3/4 cup granulated sugar1/4 cup sour cream1 teaspoon vanilla extract2 eggs, room temperaturePinch of salt 2 tablespoons sprinkles Crust:Two 20 packs of Pillsbury Christmas sugar cookies (Used 25 for the cheesecake crust. Remaining can be baked per package instructions for decoration) Press down on the cookies once they’re in the pan so they are at least touching. Bars:1. With a hand mixer or stand mixer, mix cream cheese, sugar, sour cream, vanilla, and salt until combined. 2. Add in eggs, one at a time until combined.3.Fold in sprinkles and then pour on top of uncooked cookie dough. 4. Bake for 35-45 minutes at 350. Place a separate pan of water on bottom rack to add moisture and reduce cracks. 5.Add additional sprinkles on top, right out of the oven.6. Allow to cool for at least one hour.
