Had a craving for spring rolls. They may look kind of janky but they were delicious. Shrimp marinated in pesto and fresh lime juice, spinach, cucumber, mango all wrapped up in rice paper. Made a dipping sauce using a sesame soy salad dressing mixed with fresh lime juice, Sriracha and avocado mayo.

Nothing is quite as comforting as a meal at the folks. Happy belated Father's Day to all the Dads out there. The desert was also killer, but it disappeared too fast to photograph.

🥘 Portuguese Arroz de Galinha a.k.a. a tasty way to use up random things in your fridge.
If you’ve got leftover rotisserie chicken, a pepper buried at the back of your crisper and some broth, this recipe is a good option.

🤔 had no clue what to do with pistachio pesto (with fish, roasted veggies, on a sandwich or cold pasta salad, maybe?)…
Discovered it’s also tasty as a pizza sauce with asparagus, eggplant, ricotta and mozzarella…

While I was busy working my daughter decided to make dinner for us. Dinner was a cheesy lemon pepper garlic pasta. It was incredible! I am one proud mama!

So, I love to see all these great dishes posted, ... they look so good. But, while I am pretty sure we are all great cooks, I suspect some of the photos. So my "integrity question of the day" is, are the photos you post the actual meal YOU made, or is it as "copy and paste" from the recipe site? Curious minds want to know.
