If you enjoy your fish with a nice crisp top, I suggest sticking your pan on the bottom rack under the broiler for approximately 25-30 mins. (depending on the thickness of your filet) This is my favourite way to cook both rainbow and salmon filets!

oh, yes to crispiness! I'm trying this next time
did rainbow trout in the oven for 20 minutes @ 375. Leftovers make for a nice salad the next day. Had with quinoa, capers and some chopped veggies.
