I find you have to 'know your dough' when you make these off season - either by using less or more flour. My Mom always had ranges for flour measurements on her recipes for this very reason! She also believed in staying with the brand you know - I've found myself doing that now too. And that is why baking is an art!

Absolutely. I never stray from brands I use. When you find a groove keep it going. However, a baker I am not, just mastered the tie plates.
I have a motto, if it requires a rolling pin, I'm not makin it!! Lol
